Instructions
Preheat the oven to 350 degrees. Line a bread pan with parchment paper or grease with butter and dust with flour.
Add the 1 avocado, 1 banana, ¾ cup sugar, 3 eggs, and ½ teaspoon vanilla to a large bowl and mix with a frk or hand mixer. Mix until the fruits are completely mashed and everything is combined.
Add in the 2 cups bread flour, 1.5 teaspoon baking powder, and ½ teaspoon salt and slowly fold them in until just combined. Fold in any desired mix ins (chocolate chips or nuts).
Pour into prepared pan and bake for 40-50 minutes or until golden brown and a toothpick inserted comes out clean.
Let the bread cool and then remove from the pan and slice.

Ingredient notes
The avocado and banana: You can use just avocado or just banana as needed, just be sure you have 1 full cup of mashed fruit.
Sugar: You can use agave, maple syrup, or coconut sugar in place of white sugar. Coconut sugar will make the bread darker.
Make it savory: You can omit the sugar and use two avocados and no banana to make this savory. And you can mix in shredded cheese and jalapenos.
Expert Tips
Use ripe fruit (even overripe): This ensures the bananas provide lots of sweetness and the avocado is nice and creamy.
Line the pan with parchment paper: This just makes it so much easier to remove and ensures no sticking to the pan!
Let the bread cool: I know it's hard to wait, but if you try to cut into the bread while warm it will crumble.
Don't overmix the batter: This will result in a dense loaf.
Storage Tips
You can keep this bread at room temperature for up to 4 days in an airtight container. Or, you can freeze it by wrapping the loaf or slices in plastic wrap and then place it in a plastic bag. This will keep for 3 months in the freezer.To thaw it, let it thaw on the counter overnight or heat in the microwave for 15-second intervals.
