why you need this avocado tiktok bread

When I saw this bread on Tiktok, I knew I needed to recreate my own version. It just had so much potential and I am the avocado foodie after all!

Now you might think a bread avocado recipe? Avocados actually have a lot of characteristics that come in handy when baking! They are fatty so they can replace some of the butter or oil and they have fiber so they provide structure to baked goods. 

This bread is:

  • Easy to make: with only 7 ingredients is there anything simpler really? The only trick here is to not over-mix the batter!!
  • Made in one bowl: By mixing the wet ingredients in a large bowl first and then adding the dry, you can combine everything in one bowl.
  • Can be sweet or savory: Just like traditional avocado toast, this bread can be either. If you want this bread less sweet, you can simply leave out the sugar. And if you want it sweeter, try adding chocolate chips!

This avocado bread can be sweet or savory which makes it super versatile. Enjoy it alongside an avocado coffee or avocado chia seed pudding!

  • The avocado and banana: You can use just avocado or just banana as needed, just be sure you have a full cup of mashed fruit.
  • Bread flour: This keeps the quick bread super fluffy but all-purpose flour works great too.
  • Baking powder: Most people use aluminum-free baking powder nowadays. But if you don’t, the bread will have a slight metallic taste. 
  • Sugar: You can use agave, maple syrup, or coconut sugar in place of white sugar. Coconut sugar will make the bread darker.
  • Make it savory: You can omit the sugar and use two avocados and no banana to make this savory. And you can mix in shredded cheese and jalapenos.

  • Overmixing: Overmixing this bread made it very dense. But delicious still! The difference between overmixing is just a couple of turns of the spoon.

  • Using honey: Honey did not work because it’s acidic and therefore reacted to the baking powder. This created an acidic taste.

You can keep this bread at room temperature for up to 4 days in an airtight container. Or, you can freeze it by wrapping the loaf or slices in plastic wrap and then place it in a plastic bag. This will keep for 3 months in the freezer.

To thaw it, let it thaw on the counter overnight or heat in the microwave for 15-second intervals.

Equipment

  • 1 large bowl
  • 1 loaf pan lined with parchment paper

Ingredients

  • 1 avocado (ripe or over ripe)
  • 1 banana (over ripe and brown)
  • ¾ cup sugar (white sugar is fine)
  • 3 eggs
  • ½ teaspoon vanilla
  • 2 cups bread flour (all purpose flour works too)
  • 1.5 teaspoon baking powder (aluminum free)
  • ½ teaspoon salt

Instructions

  • Preheat the oven to 350 degrees. Line a bread pan with parchment paper or grease with butter and dust with flour.
  • Add the 1 avocado, 1 banana, ¾ cup sugar, 3 eggs, and ½ teaspoon vanilla to a large bowl and mix with a frk or hand mixer. Mix until the fruits are completely mashed and everything is combined.
  • Add in the 2 cups bread flour, 1.5 teaspoon baking powder, and ½ teaspoon salt and slowly fold them in until just combined. Fold in any desired mix ins (chocolate chips or nuts).
  • Pour into prepared pan and bake for 40-50 minutes or until golden brown and a toothpick inserted comes out clean.
