Through my own trial and error, I've developed a foolproof way to make spring rolls. This includes the best filling combination and the most insanely delicious peanut ginger sauce. You'll be making these avocado spring rolls for lunch or dinner every week because they're that good and that simple!

Step one: prepare your ingredients
Prepare the ingredients by chopping the vegetables and cooking the rice noodles per the package directions. You’ll want to thinly slice the avocado, carrots, and cucumbers. I like to keep them the same length as I want the rolls to be, so about 4”-5” long. I also like to prepare my workstation by laying out a large cutting board with rice paper wrappers, a large bowl of water next to it, and all the ingredients beside the board.
Step two: soften the rice paper wrappers
Fully submerge the rice paper wrappers in each rice paper wrapper into warm water for a few seconds. Transfer it to your flat work surface and let it sit as you fill it with your ingredients.
Step three: Fill the rolls
Place 4 slices of avocado, 4 basil leaves, 4 mint leaves, and a small portion of the other ingredients near the bottom of the wrapper. Do your best to stack the ingredients vertically (not laying them flat and horizontally) as this will help when rolling.
Expert tip: Make sure the bowl for dipping the wrappers is large enough to fully submerge the wrappers otherwise it is hard to get them wet enough.
Step four: roll!
While holding the ingredients in place with your last three fingers on each hand, use your pointer fingers and thumbs to fold the wrapper from the bottom over the top of the ingredients. Tuck it under the ingredients, slightly sticking it to the inside of the wrapper. Then fold over each side of the wrapper (left and right), and continue rolling the wrapper up until the ingredients are fully encased and no wrapper remains unrolled.
Repeat this process for all of your ingredients. This recipe should make 4-5 rolls depending on how full they are.
Expert tip for rolling: Make sure the rice paper wrapper is fully pliable before starting to roll. When you lift it, it should feel like thick, sticky plastic wrap.

Yes, you can prepare the rolls in advance and store them in an airtight container in the fridge. However, it's best to consume them within two days for the freshest taste and texture. Be sure to check out our storage section for storage tips.
If you're not a fan of peanut sauce, you can try sriracha mayonnaise or another soy sauce-based dipping sauce such as yuzu sauce (a lemony soy sauce).
You can typically find rice paper wrappers at your local Asian market or well-stocked grocery stores, often in the international foods section.
If using warm water, you should only need to soak the wrappers in water for 5- 10 seconds. Then let them rest while you fill them to continue softening.
Chinese spring rolls are fried while a fresh roll is never fried. Vietnamese spring rolls (like these) are also not fried. You may see this style of spring roll called a summer roll or a fresh roll.

storage & meal prepping tips
If you have leftovers or just want to make these for lunch, here are some tricks to keep these rolls just as tasty the next day!
Fridge: To store leftovers, wrap each roll in plastic wrap or foil and then place them in an airtight container in the fridge for up to two days. If the rice paper wrappers touch each other, they will stick to one another and tear when pulled apart. This isn’t the end of the world but does make it harder to eat.
Freezer: These rolls are best enjoyed fresh and aren't suitable for freezing.
If you want to meal prep these, I recommend dicing and chopping enough veggies (except the avocado) for the whole week and making enough sauce for the whole week. Then, make just enough rolls for two days' worth of meals and repeat at the end of day two. This keeps you eating the freshest avocado spring rolls possible while still being super quick to throw together.
